Why a Good Grinder Matters More Than the Machine
It is common advice in the coffee community, and it holds up under scrutiny: grind quality has an outsized effect on what ends up in your cup, more than most machine-side specs.
Extraction starts with particle size
Espresso extraction depends on consistent, correctly sized coffee particles. Uneven particle sizes extract at different rates simultaneously, producing a shot that is both under- and over-extracted at once — a common cause of a sour-and-bitter taste in the same cup, which no amount of machine-side precision can correct after the fact.
A great machine cannot fix a bad grind
No amount of PID precision or pressure profiling corrects for inconsistent grounds; the machine can only extract what the grinder gives it. Unlike a marketing claim that a specific machine feature "improves extraction," grind consistency is a precondition for extraction working as intended in the first place, not one improvement among many.

How to tell if your grinder is the actual problem
If shots vary noticeably from one to the next despite an unchanged recipe (same dose, same grind setting, same tamp), and the variation isn't explained by bean freshness, the grinder's consistency is a reasonable first suspect — especially on a blade grinder or a very basic burr grinder with poor burr alignment.
